Ingredients and spices that need to be Prepare to make Satay - Malaysian Satay:

  1. A Chicken
  2. 2 kg Chicken Breast/thigh Fillet
  3. Some chicken skin (optional)
  4. B Blend
  5. 1 large red onion
  6. 2 large brown onion
  7. 3 garlics
  8. 5 slices ginger
  9. 5 slices galangal
  10. 6 long stalks of lemon grass
  11. (Thinly sliced before blending)
  12. C Spices
  13. 1 tbsp tumeric powder
  14. 1 tbsp cumin powder
  15. 2 tbsp Fennel powder
  16. 1/4 C Cooking oil
  17. 2 C white sugar (can be reduced 1 C)
  18. 1 C coconut sugar - for less sweet satay, reduce to 1/2 C (coconut sugar is optional)
  19. Note on sugar:
  20. 👉🏻 For a less sweet satay, reduce sugar to 2 cups for 2 kg chicken or more. Adjust to your preferred sweetness
  21. 👉🏻 coconut sugar has a hint of caramel flavour. Having it is a bonus, but if you dont have any, it’s totally fine
  22. D. Glazing
  23. Paste from the marination
  24. Few tbsp of cooking oil
  25. 1 tbsp Honey
  26. Bamboo or metal skewers

Instructions to make Satay - Malaysian Satay

  1. A - cut/cube chicken breast no bigger than a size of a thumb (very small bites). Blend ingredients in B & prepare ingredients in C.
  2. Marinate chicken in B (blended ingredients) & C (spices), preferably few hours or overnight.
  3. Thread chicken onto skewers or bamboo skewers, alternate chicken pieces with some chicken skin (if using), keeping some of the paste for later use. Fat from chicken skin helps satay from drying. If using bamboo skewers, soak them for at least an hour before using. Next, Preheat grill to medium heat. Place skewers on the grill, turning satays & occasionally brushing them with oily paste for glazing in D. Grill until satays are completely done.
  4. Serve with peanut sauce/gravy.
