  1. Chicken marinade
  2. 600 g chicken thigh fillets
  3. 1 tsp turmeric
  4. 1 tsp white wine vinegar
  5. 1/2 tsp black pepper
  6. 1 tsp salt

  8. 5 cloves garlic
  9. 5 shallots
  10. 2 inch root ginger
  11. 1/2 tsp fennel seeds crushed
  12. 1 large red onion finely chopped
  13. 2-3 medium tomatoes chopped
  14. 1 medium potato peeled and chopped
  15. 10 curry leaves
  16. 5 green chilli sliced down the middle
  17. 1/2 tsp turmeric
  18. 1/2 tbsp coriander powder
  19. 1/2 tsp cumin powder
  20. 1 tsp Garam Masala
  21. 1/2 tsp chilli powder
  22. Salt to taste
  23. 3 large handfuls of spinach
  24. 2 tbsp natural yogurt
  25. Garnish
  26. 10 curry leaves
  27. 2 shallots very finely sliced
  28. Coconut oil

Instructions to make Keralan style chicken curry

  1. First marinade the chicken by mixing the marinade ingredients into the chicken and setting aside for a minimum of 30 minutes.
  2. Next make a paste by adding the chopped shallots, ginger, garlic and crushed fennel seeds to a dish or pot and blitzing with a stick blender. Then set aside.
  3. Next add 1 tbsp coconut oil a heavy based pot over a medium heat and add the chopped onions, chilli and curry leaves. Fry until soft.
  4. Add the dried spices and fry for another 2 minutes. Then add the garlic / ginger paste. Fry for 3 minutes
  5. Add the tomatoes and cook until soft. Then add the chicken, potatoes and 175ml water. Cover, then down the heat to medium low and cook for 15 minutes.
  6. Remove the lid and cool for another 7-10 minutes until the sauce starts to thicken.
  7. Meanwhile, In a separate pan, add 1 tbsp coconut oil to a frying pan. Heat over a high heat and quickly fry the curry leaves and shallots for 30 - 60 seconds until golden.
  8. Once the sauce has thickened, stir in the spinach until wilted. Then stir in the yogurt, season to taste and serve with rice.
