  1. For  the Skewers
  2. 4 chicken thighs
  3. 6 spring onions, cut into 2.5cm lengths
  4. For the sauce ‘Tare’
  5. 250 ml chicken stock
  6. 2 spring onions
  7. 1 knob ginger, about 2.5cm in size, sliced
  8. 25 ml sake
  9. 50 ml mirin
  10. 1/2 tbsp sugar
  11. 25 ml tamari
  12. 25 ml dark soy sauce
  13. 25 ml water

Instructions to make Yakitory Experiment

  1. For the sauce
    Add all the source ingredients into a saucepan, bring to the boil and reduce by half until thick and glossy.

    * Prepare this the day before, or a few hours before to let it cool in the Fridge. You can place in a Jar and store in the fridge for a few weeks.
  2. For the Skewers
    Remove any skin from the chicken and cut into rectangular strips. Fold each strip, pushing a skewer through each side to create a domed effect. Alternate each piece of chicken with a section of spring onion and brush lightly with oil
  3. Lightly baste both sides of the chicken and place under a hot oven grill for 3-4 minutes.
  4. Flip skewers and brush the surface with source. Cook for 3 minutes.
  5. Flip over, brush the surface with source and cook for 30 seconds.
  6. If required, turn the skewers once more to char the other side.
  7. Remove the skewers from the tray and place them onto a plate. Serve immediately.
